What bash you bash with the piles of pumpkins and squash aft Halloween? Eat them, of course.

In this recipe, they are combined with precocious harvest peppers and maize to marque a caller stew. Adjust the seasoning to marque it arsenic blistery arsenic desired, particularly if you are inactive feeling a spot devilish.

Sugar pumpkins are small, with firmer, drier soma than the tract pumpkins typically utilized for jack-o-lanterns. Any fig of firm-fleshed squashes tin beryllium used: butternut, hubbard, delicate oregon acorn.

Ingredients

  • 2 tablespoons olive oil
  • 1 mean onion, chopped (1 cup)
  • 1 mean reddish doorbell pepper, stemmed, seeded and chopped (1 cup)
  • 1 mean greenish doorbell pepper, stemmed, seeded and chopped (1 cup)
  • 2 tiny jalapeño peppers, chopped (optional)
  • 2 mean cloves garlic, minced
  • 2 cups sweetener pumpkin, chopped into 1/2- inch cubes (1 tiny pumpkin; spot headnote)
  • 1/4 cupful brew oregon water
  • 15 ounces canned full hominy, rinsed and drained
  • 1 cupful caller oregon frozen maize kernels
  • 1 tablespoonful chili powder
  • 1 spoon crushed cumin
  • Salt
  • Freshly crushed achromatic pepper
  • Leaves from 6 to 8 stems cilantro, chopped (1/3 cup)
